Sweet Chili Pineapple Sauce

Introduction


Prepare your taste buds for a fiesta with this Sweet Chili Pineapple Sauce! This flavour-packed concoction is like a tropical dance party in your mouth, blending the sweetness of pineapple with the sizzle of chili flakes. It's the kind of sauce that'll have your taste buds doing the cha-cha. Plus, with just a handful of ingredients and minimal prep time, you'll be the salsa king or queen of the kitchen in no time. Let's get this flavor fiesta started!


Ingredients:


- 1 cup fresh pineapple, finely chopped

- 1/2 cup water

- 1/4 cup white vinegar

- 1/4 cup honey if you don't have use brown sugar

- 2 tablespoons soy sauce

- 1 tablespoon fresh ginger, minced (feel free to give it a mini-chop dance while you're at it!)

- 2 garlic cloves, minced (let's mince to the beat!)

- 2 teaspoons cornflour

- 2 tablespoons water (additional for cornstarch)

- 2 red bird eye chilies we like heat (adjust based on your spicy dance moves)

- Salt to taste (because every dance needs a pinch of salt!)


Directions:


1. In a saucepan over medium heat, toss in the finely chopped pineapple, water, white vinegar, honey, soy sauce, minced ginger, chopped chillies and minced garlic. Let the flavour party begin as you bring this mix to a simmer. Stir occasionally to keep the dance floor hot!


2. Once the mixture starts shimmying, lower the heat and let it groove for about 10/15 minutes, or until the pineapple gets tender and the flavours start doing the tango together.

*** I zapped with a blender wand just a couple of pulses to make a bit smoother***


3. In a small bowl, create a slurry by mixing cornflour with 2 tablespoons of water. Stir it like you're doing the twist until it's smooth and ready to join the party.


4. Pour the cornflour slurry into the sauce, stirring like you're busting out your best moves on the dance floor. This step will thicken up the sauce and give it that extra oomph!


5. Shake things up by adding the red chili flakes and salt to the mix. Adjust the heat level to match your spicy dance preferences. Let it simmer for another 5 minutes, or until it reaches the perfect thickness.


6. Once the sauce is grooving to the right beat and has thickened to your liking, take it off the heat and let it cool. As it chills out, it'll continue to thicken up, just like your moves after a dance marathon.


7. Transfer the sauce to a jar or container and pop it in the fridge until showtime. It's ready to steal the spotlight at any meal!

Bbq at the moment, so chicken pork or beef, but I think it would be nice in a cheese sandwich. But that's me lol
