Beetroot Curry
Introduction
Welcome to my kitchen symphony, where simplicity takes centre stage and flavours harmonise in perfect balance! Today, I'm celebrating the timeless elegance of beetroot as I embark on a spicey adventure like no other.
Ingredients
1 packet of vacuum-packed beetroot (no vinegar), about 4 medium-sized beets
2 cloves of garlic, minced ( I use Garlic Puree big squirt)
1 onion, finely chopped
1 Red or Green bird eye chili pepper, deseeded and chopped (if I'm feeling daring don't deseed
1 tablespoon of ginger, grated
1 can (400ml) of coconut milk
2 tablespoons of curry powder
1 teaspoon of ground turmeric
1 teaspoon of ground coriander
1 tablespoon of vegetable oil
Salt and pepper to taste
Oil for sautéing
A pinch of culinary finesse (optional but encouraged)
Instructions
Heat the vegetable oil in a large pan over medium heat. Add the chopped onion and sauté until it becomes translucent and fragrant.
Add the minced garlic, grated ginger, and chopped green chili pepper to the pan. Stir well and let them cook for a couple of minutes until they release their aromas.
Sprinkle in the curry powder, ground turmeric, and ground coriander. Stir to coat the onions and spices evenly. Let everything cook for another minute to allow the flavours to mingle.
Now, it's time to add the star of the show – the diced beetroot! Toss them into the pan and stir until they're coated with the aromatic spice mixture.
Pour in the coconut milk and give everything a good stir to combine. Bring the curry to a gentle simmer and let it cook for about 15-20 minutes, or until the beetroot is tender and cooked through.
Season the curry with salt and pepper to taste, adjusting the seasoning as needed.
Once the beetroot is tender and the curry is rich and flavorful, it's time to serve! Ladle the curry into bowls and garnish with fresh cilantro, if desired.
